540G BUTTERMILK
03 EGGS
30G MELTED BUTTER (FOR BATTER)
250G FRESH OR FROZEN FRUIT (OPTIONAL)
30G COCONUT OIL / BUTTER (TO COOK)

5-8 MIN PER BATCH
DIRECTIONS:
1. WHISK EGGS AND LEMON ZEST INTO BUTTERMILK
2. WITH A WISK, FOLD QUICKSTACKS MIX INTO BUTTERMILK AND EGG
MIXTURE. FOLD THE QUICKSTACKS IN WITH THE LEAST AMOUNT OF FOLDS
POSSIBLE, KEEPING SOME SMALL PEA SIZED LUMPS IN THE BATTER
3. FOLD MELTED BUTTER INTO BATTER GENTLY WITH SPATULA. ADD IN FRESH
FRUIT AND INCORPORATE WITHOUT OVER MIXING
4. IN A LOW/MEDIUM HOT PAN, MELT BUTTER OR COCOUNUT OIL AND LADLE
BATTER INTO PAN, KEEPING ENOUGH SPACE FOR THE BATTER TO EXPAND AND
NOT TOUCH. FLIP PANCAKES AFTER ABOUT 5 MINS, WHEN THE SIDES START
TO LOOK MATTE AND BUBBLES APPEAR ON THE TOP THROUGHOUT. CONTINUE
COOKING FOR ANOTHER 3 MINS ON THE OTHER SIDE
5. SERVE WARM WITH SOUR CREAM, MAPLE SYRUP AND FRESH FRUIT
